Most of this was due to how Wordpress handles email - so I went with SendGrid + Postman SMTP (plugin) for those transactional emails and I started using the paid plugin Profile Builder for my registration forms. 

Now, with over 100+ users, nobody says they have problems with registering/logging in/emails anymore. 

It was a paid solution, but a solution that's been consistent and stable.

This may be a Wordpress problem, but naturally, the forum is useless if members can't register. Does anybody have recommendations for what registration plugin is most useful?
