I know media can be added to the forum description but I would like to preferably have the ability to add a small image instead of the forum icon such as in the example the below.

Hi @ballo ,
There is no option to change icons using an image. You can change icons using font-awesome classes in the edit forum screen.
However, there are some workarounds provided by other users:
