My forum keeps redirecting to the latest posts page. Even though I have just created a post it won't show. No matter what I click on it will just divert to a page saying 'Latest Posts' and then 'NOTHING FOUND'.
I am not sure why but it seems like all the links are broken. If I click on 'Forums' or Topics' it will take me to a page that says 'This XML file does not appear to have any style information associated with it. The document tree is shown below.'

Not sure if related to your issue but you have PERMALINKS issue (slugs).
This "index.php" in your url shouldn't be there. REMOVE it and check again your issue.

Actually you didn't.
Hover and you will see the index.php still in there. Or you didn't remove it in all places.
Where would I be able to edit this? I am currently in settings>permalinks
Well, how should i know your setup? Check wpForo url settings for once.
Also try
Go to Dashboard > Forums > Dashboard and Press Rebuild Threads Button.
Also wpForo has some tools for debug, do you seen any errors in there (db maybe) ?
