wpForo and WordPress set usernames as Display Name by default. However as far as I see you don't use wpForo and WordPress registration forms. You use other plugin. You should ask this question that plugin developers. They should find some solution for you.

I use Ultimate Member for users management, do you know if there is a problem with that plugin?

@xernovil @robert I'll jump back in here as I use UM for user management also. Go to UM -> General -> Users and you'll see a drop-down selector where you can change the display name globally. You'll need to clear all caches after making this change.
