I have set up a new forum and am copy and pasting the forums and topics from the old website, however it means the newest topics are now buried at the bottom and the old ones are at the top. Is there a way of changing that around or dragging and dropping the order of the topics or questions?

wpForo has a free migration tool called Go2wpForo. Please check the tool. Probably you can do the migration yourself, so there will not be necessary to edit or change the date.

Another way, you should edit the date in the database table.
