Hi,
in the member profile, we have the possibility to put a signature.
Is there a particular format for the signature ?
can we put an image ?

I'm sorry but not, wpForo signature doesn't support images. We'll add it in next version. Currently it only allows: 'a', 'abbr', 'acronym', 'b', 'blockquote', 'cite', 'code', 'del', 'em', 'i', 'q', 's', 'strike', 'strong'.

Yes, you can add image in signature. Use this HTML code for images:
<img src="http://example.com/yourimage.png" />
Just insert your image URL to this HTML code and put it in Signature Textarea.
