Sorry if this is a stupid question, but I can't seem to find the option to delete categories and forums. I tried looking everywhere but no result...

Don't you have these options in Forums > Forums admin page?
This maybe removed by other plugins. Please deactivate other plugins one by one and check after each deactivation.
