I was wondering if there is a way to habe it redirect to edit account after someone registers. So they can fill out their profiles.

If the "Email Confirmation on Registration" option is disabled you'll be redirected to account page, it already works like you describe. The option is located in Dashboard > Forums > Settings > Features admin page.
