I want to make profiles visible to guests and block only a membersgroup.
How is that possible?

Sure it's possible. There are the following permissions/CANs for this purpose:
- Can view members
- Can view profiles
In your case for"Guest" usergroup those permissions should be checked and unchecked from the other groups you want.

How can i block one members group not to be visible?
just edit the current usergroup and uncheck the "Display on Members List" option.
