Hello - when a user subscribes to an email currently, it's my understanding that they get an email any time there's an update to the post - is it possible to bundle notifications and send out a "daily roundup" of the user's subscribed posts?

I'm sorry but not, wpForo doesn't have such feature yet. We may add it in the future, but not in the near future releases.
