how can I change that the Meta Title of a Thread only shows "Thread Name-Forum Name" I don´t want the part in the middle which shows the Forum Topic in the middle of the Meta Title.

look in the Meta-Title of this thread. It says:
"Thread Titles too long for SEO. - How-to and Troubleshooting - wpForo Support Forum"
This is the Meta Title which Google uses for the serps. It is much too long and very bad for SEO if all the Threads of the Forum are using 2/3 of the same Meta Title.
I only want the first part (Thread Titles too long for SERO) and the last part of the title (wpForo Support Forum) but not the middle part (how-to Troubleshooting).

Well i created a PAGE with that title as here (for test) and my SEO plugin (SEO Framework) reported also long and will be truncated. But the truncated will be the END of the title, so it doesn't matter.
I mean the truncated part will be the "wpForo Support Forum" so ....
Also this is the most optimized forum, talking about SEO and everything. Well respected.
An example: This url

has as title in meta:

As you see the lenght is also very very long.
So i think you should not worry about the SEO myth and go on with your forum. Your forum will rank if it is good and has some good VOTES (backlinks).
I worry about it because it will be a problem if every title is 2/3 the same. Can anybody help to fix this problem?
