i'm not sure what would be better, theoretically, if I want to create a forum called "fruit", and had specialist contributor for each one (apples, oranges, etc). Would that be a category? I don't think it would be a topic. How would I handle this?  Thanks!

In this case, the category should be fruit, and the forums are apples, oranges, etc. the subforums can be e.g. red apples, green apples, etc. 

I'd suggest reading wpForo documentation for forum configuration.
