When I unsubscribe from an email link in this forum I still get redirected to the home page instead of the subscription settings.Â

You should use the "Custom Redirection URLs after following actions" option. The option is located in Login & Registration tab. You'll find it in the top wpForo menu section:
- Single Board Forum: Dashboard > wpForo > Settings > Login & Registration
- Multi-boards Forum: Dashboard > wpForo > Settings > Login & Registration
