Is it possible to set the minutes to never expire to allow users to be able to edit and/or delete their own posts indefinitely? (I am referring to the settings in forums > settings > topics & posts > Allow Edit/Delete...image attached)

I'm sorry but there is no way. You should set a big number as an alternative. We'll take this under consideration for future versions.
