You can be changed in the administration panel:
Forums /settings/ Forums Accesses
There is a list to grant permissions to users.
As far as I see you, you want to restrict Moderators so they could not delete Administrator posts, am I right? If so you should wait for 1.0.3 version. There is no way to do this with 1.0.2. At the moment you can disable "Can Delete Posts" permission in Moderator Access settings.
