Hi,
I Have both WpForo and WooCommerce installed, and I would like my WooCommerce customers to continue to have role 'Customer', but those that register via WpForo to have role 'Subscriber'. Is there a way I can set that up?

First of all, there is no Subscriber role for wpForo. wpForo has own Usergroup system, and the WP Subscriber is the same Registered usergroup in the forum.
At first, please navigate to Dashboard > Settings > General admin page, set "Customers" as a value of the "New User Default Role" option.
Then navigate to Dashboard > Forums > Usergroups admin page, make sure the usergroup and user roles are attached correctly.
