I, as an admin, get an email every time someone subscribes to a topic so if something is posted to a topic that has five subscribers, I get five emails. I like being notified of every post, but is there a way to reduce the number of emails from the subscriptions?

It seems you've subscribed to forums with different accounts and the account emails you use are forwarded to one email, or even they're not forwarded. You should use the unsubscribe button in emails.
Also, you should leave only one email address in the "Forum Admins email addresses" option field. This option is located in Dashboard > Forums > Settings > Emails Tab:
