Does WPForo have the ability to hide portions of the forums and topics based on user group? A use case would be, if we wanted to use this as a support forum, and add our customers to have access to it, could we restrict internal forums for our internal employees and give access to specific forums to our customers? Or would a completely separate forum be needed? It would be nice to use the same one so that we wouldn't have double copies of questions to search through.

Sure, wpForo forum access system is very rich, and it can configured per usergroup for each forum individually. Please read these two topics:

Moreover, users can set their topics "private". These topics are only accessible for admins, moderators and for the topic owner.

Just to be clear, when restricted access is mentioned, what you're saying is this software will not allow users to actually see or be able to search the private forums itself, correct?
Yes that's right, as you see in the doc you can restrict user from viewing forums, topics, replies etc.
